Overnight Blueberry French Toast Bake

I have to have to have to share this Overnight Blueberry French Toast Bake now, in the hopes that everyone here will heed my advice and push this top the top of the Christmas morning breakfast plans ASAP. This has become somewhat of a tradition in our house on Christmas morning, and I kind of love it. We do a big brunch, with this French toast bake, some homemade hot chocolate, bacon, eggs, hashbrowns, and maybe some tamales if we can rustle them up! Let me tell you, it does NOT disappoint!

We ate on it all day, and it was gone before we knew it, but it was enough to feed about 10 people comfortably!  I make sure to prep this the night before, so we can toss it in the oven in the morning!  Which leaves us with just a few things to whip up later.

I'd say this it the perfect breakfast for overnight guests, when you want to impress, or if you just want to make a big batch of something sweet for the week.  You honestly don't even need syrup, the crumble gives it just the right amount of flavor.

Overnight Blueberry French Toast Bake

Ingredients:

  • 1 loaf brioche (gluten-free if available)

  • 5 eggs 1 cup milk of choice

  • 1 cup heavy cream or coconut cream

  • 1/2 cup coconut sugar

  • 2 tbsp vanilla extract

  • topping:

  • 1/2 cup cassava flour (could sub almond flour)

  • 1/2 cup coconut sugar

  • 1/2 tsp cinnamon

  • 1/4 tsp vanilla bean powder (or 1 tsp vanilla extract)

  • 1/4 tsp salt

  • 1/2 cup cold butter

  • 1 cup blueberries

  • *powdered sugar toppings optional

Directions:

  1. Grease a 13 x 9 pan and set aside.

  2. Cube bread and place into greased pan evenly--this does not have to look perfect.

  3. Sprinkle blueberries over bread evenly.

  4. In a separate bowl, mix milk, eggs, cream, sugar, and vanilla.

  5. Pour mixture evenly over bread and blueberries.

  6. Cover pan and refrigerate overnight for best results.

  7. In a separate bowl, mash together all topping ingredients (except powdered sugar) until crumbly, then cover and refrigerate overnight.

  8. In the morning, preheat oven to 350 degrees.

  9. Remove pan, and sprinkle crumble topping over the bread and blueberry mixture.

  10. Bake at 350 for 45 minutes to an hour.

  11. Remove and serve with powdered sugar, maple syrup, or honey--ENJOY!
